Cuando el calor es tu fuente de inspiración, y llevas días comiendo gazpacho (no hay remordimiento) o alguna otra de las sopas que hemos sugerido aquí, como el ‘tarato’ o la sopa fría de aguacate… toca innovar.
Teníamos una calabaza de la huerta de mi suegro… y no fue difícil encontrar opciones de sopa fría. Me gustó la opción del blog: ‘la receta de la felicidad’, aunque en nuestro caso hicimos algunas variantes que encontramos en otras recetas, como sustituir el queso crema por yogur griego (dejamos solo una cucharada de queso crema para darle más textura) y agregar una zanahoria para dar un toque de sabor y color.
Y rica, rica, rica…
Ingredientes (para 4 personas)
- 1 kilo de calabaza troceada
- 1 puerro
- 1 zanahoria
- 1 yogur griego
- 1 cucharada de queso crema
- 2 cucharaditas de curry
Preparación:
- En una cazuela, ponemos a calentar el aceite de oliva, y rehogamos el puerro troceado y la zanahoria en láminas.
- Agregamos la calabaza cortada en dados pequeños, cubrimos con agua y llevamos a ebullición. Agregamos sal y bajamos a fuego lento hasta que la calabaza esté tierna, entre 20 – 30 minutos.
- Retiramos del fuego y añadimos el yogur griego, la cucharada de queso crema y las cucharaditas de curry.
- Pasamos la batidora hasta obtener una crema fina.
- Dejamos enfriar.
- Al servir, podemos adornar con hojas de albahaca o de eneldo; o incluso de menta para darle un toque de frescor; y una cucharada extra de yogur.
